This Red Lentil Curry is so quick and easy you can make it in no time at all!  Also, it tastes amazing with some warm naan bread on the side.

Ingredients

  • 1 cup Red Lentils
  • 3 cups Water
  • 1 cup Broccoli (Steamed)
  • 1 cup Mix Veggies (Steamed)
  • 2 diced Potatos (Steamed)
  • 2 tbsp Curry Powder
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 cup Chopped Cashews

Instructions

  1. Place broccoli, mix veggies and potatoes into a vegetable steamer.
  2. While the vegetables steam, add 1 cup of red lentils to 3 cups of water into a pot.
  3. Bring pot up to boil and then lower to medium heat for 10-15 or until the lentils are soft.
  4. When vegetables are soft add them to the pot of cooked red lentils along with the chopped cashews, black pepper, salt, and curry powder.
  5. Mix together and serve.

Notes

Serve with a side of warm Naan Bread. Feel free to add other vegetables to this dish.
