Sicilian Pistachio Gelato | A Real Italian Treat!

This Sicilian Pistachio Gelato always reminds me of how delicious pistachio gelato really is. I can’t seem to get enough of it! So flavorful and creamy with every bite.  Definitely an amazing treat in the summer or anytime of the year!

Sicilian Pistachio Gelato | A Real Italian Treat!

Ingredients

  • 1/3 cup pistachios (shelled)
  • ½ cup almond milk
  • 1/3 cup dates (soaked, covered in water, use both)
  • ½ cup spinach
  • 1/3 cup + 1 tbsp - peanut butter or almond butter
  • 1 tbsp almond extract
  • 1 tbsp vanilla extract
  • 2 tbsp gojis

Instructions

  1. First, blend the dates and the water that was used for soaking them in a high speed blender.
  2. Add the rest of the ingredients and blend until it is fully homogenized.
  3. Pour the mixture into a container.
  4. Put the covered container in a freezer for 5 hrs or overnight.
  5. Enjoy!

Best served with extra pistachios and goji berries on top!
