Ingredients

  • 2 1/2 cup cooked chickpeas or from a can, drained & rinsed
  • 1/2 cup chopped dried apricots
  • 2 Tbsp chopped dried or fresh rosemary
  • 3 Tbsp tahini
  • juice of 1/2 lemon
  • 1 garlic clove
  • 1/3 tsp salt

Instructions

  1. Preheat oven to 350 F (180 C).
  2. Process chickpeas in a food processor until crumbly. Then add the rest of the ingredients in the food processor until the mixture turns into a moist dough.
  3. Roll each ball in 2.5cm balls on parchment paper-lined baking sheet.
  4. Bake them for 12 minutes.
  5. Enjoy!

Notes

Goes great with a delicious chipotle or ranch dipping sauce!
